3 tbsp Corn Starch
2 cups Almond milk
1 tsp Vanilla powder
250 g Strawberries frozen or fresh
3 tbsp Maple syrup
230 ml Water
1.5 tbsp Corn Starch

    Homemade vegan pudding can be simple and quick to make. It requires just a few ingredients and not much time on the stove. This recipe is also much healthier than full-fat pudding recipes. While you prepare the pudding, you can add additional flavour to the recipe if you like. Use ingredients like lemon zest and juice or fruits such as blueberries and raspberries. They add to the pudding’s colour and texture as well.

    You can make this recipe with Strawberry Sauce or without it. You can sprinkle the pudding with everything – chocolate, cinnamon, coconut flakes. But I think that the best partner for the vanilla pudding is fruits. As you know about me, I hate chocolate desserts. 🙂 But I am in love with every dessert with vanilla flavour and fruits.

    Add almond milk, erythritol, vanilla and corn starch into a saucepan and bring it to boil. Stir constantly until thickened.

    Pour the mixture into glasses and let them to cool. After that store them for one or more hours into refrigerator.

    Meanwhile, start making the strawberry sauce.

    Put the strawberries, water, maple syrup in a saucepan. Bring to a boil and soften the strawberries.

    Then mash them with an appliance. Leave whole pieces of strawberries.
    Let the crushed fruits boil so that some of their water evaporates.

    Dissolve the cornstarch in a bowl with a little cold water. Pour it into the sauce.

    From time to time, stir in the sauce.

    When done, remove from the heat and allow to cool.

    Pour the sauce into the bowls with the vanilla cream. Garnish with more fruit and enjoy this delicious treat in a glass.
