Winter needs comfy delicious meals. That is why I cooked this amazing Tomato Zucchini Pasta. And it is vegan and gluten-free!!! I use gluten-free rice pasta and vegan mozzarella cheese.
Gluten-free pasta is convenient for me when I don’t have enough time to cook. In this hectic daily life, it is often a case that the meal is cooked very quickly. Actually, pasta is subject of any kind of cooking fantasy and you can serve it with all kinds of sauces and dressings.

Cut the zucchini and cherry tomatoes into cubes. |

Put them into heated pan. |

After they are almost ready, put the tomato sauce, nutritional yeast, oregano and salt. |

When the vegetables are ready put them aside and start preparation of the rice pasta. |

Put rice pasta into boiling water with little olive oil for 9 minutes and stir occasionally. |

After that mix vegetables and pasta and pour the mixture in plates. |

Sprinkle the pasta with vegan mozzarella cheese. |
