1 Onion
2 Carrots small
40 g Olives
5 tbsp Dried Tomatoes
1 tsp Salt
2 tsp Oregano
1 tsp Honey garlic
1 cup Almond milk
80 ml Grape seed oil
1 cup Rice flour
1 cup Buckwheat flour
2 tsp Baking powder

    When I was little I didn’t like to eat muffins. Muffins don’t bring back childhood memories, but they do remind me of my years at the university. It was back then when I fell in love with them. 🙂 There was always time between heavy law textbooks and endless lectures. Gradually, the muffins became a true friend with my cup of coffee. Even when I started eating vegan and gluten-free, I didn’t part with them.

    I’ve always thought that living a healthy lifestyle doesn’t mean stopping eating everything and chewing just one salad a day. On the contrary, eating healthy means modifying all your recipes and meals so that you follow a good standard of eating that brings everything your body needs. This is not easy at all! But it’s worth the effort. For me, this is not an obligation, but a pleasure. It is not happiness for me to be able to eat everything I want, but to feel good and be healthy. It took me a long time to stop one by one every harmful thing from my diet and get to where I am today.Now I feel wonderful – I have strength, energy, I am happy, I sleep well, I have lost weight, my skin is clean and shiny, my hair is healthy and I managed not to take any hormonal drugs. It is not natural to have hair that falls out and nails that break. Nor is it normal to have a palpitation. Don’t get used to these things, they are not normal. Everyone deserves a full and happy life. I haven’t been here in a day. Ah, I was getting closer every day, changing something.

    Prepare the carrots and onion. Chop onions and carrots.

    Cut the sun-dried tomatoes and olives into small pieces.

    Roast onions and carrots in a preheated pan with a little fat. When the mixture is ready, add the tomatoes and olives and bake for another 3 minutes. Remove from the heat and set aside.

    In a large bowl, mix all other ingredients. Add the vegetable mixture and stir.

    Pour the mixture into silicone muffin tins.

    Bake at 180°C degrees for 25 minutes.
