250 ml Almond milk
3 tbsp Coconut oil
3 tbsp Maple syrup or honey
Zest of lemons from 2 lemons
2 tsp Vanilla powder
2 tsp Instant dry yeast
400 gr Rice flour or more or another gluten-free flour
pinch Salt

This is a classic Easter bread made healthier with gluten free flour, maple syrup and coconut oil.

    Easter is not the same without Easter bread. In the morning with a cup of coffee and a piece of Easter bread, you can fight everything during the day. For a person who does not eat dairy products and gluten, it is quite hard during the holidays. All foods during the holidays contain gluten, sugar and dairy. Sad but true. Ah, these are the foods that trigger my acne and change my hormone levels. That’s why I’m always looking for a way to prepare the dish without these ingredients so that I can enjoy it too.
    The recipe is quite pleasant to prepare, but there are things we need to consider before we start. It is important to use yeast that we know works. We should also use gluten-free flours, which we are happy with and have used, because a negative result can be obtained otherwise. Believe me, it has happened to me too! 🙂 If I use an already open packet of yeast, then it does not work.

    It is very important to wash well the lemons or oranges before you grate the zest.

    Add milk to a small saucepan and bring to slow simmer. Whisk in the coconut oil, maple syrup, lemon zest and vanilla, then pour into large heatproof bowl. It is important that it should be just warm to the touch. Stir the yeast in and let it rest for about 15 minutes or until foamy.

    Stir in the flour and the salt. Stir until it becomes too difficult to stir.

    Turn the dough out onto a silicone pad and knead the mixture, adding extra flour, until a smooth and soft dough forms.

    Put the dough in a bowl and let it sit in a warm place to rise. About an hour.

    Put the dough into silicone form and bake for 30-45 minutes at 180° degrees. You can add raisins in the dough and stir them well.
