I decided to give you a delicious and healthy recipe that is perfect for breakfast or afternoon dessert. It is very easy and pleasant to prepare, and the result is unique! Not only is it vegan and gluten-free, but this pudding is also a keto dessert. Moreover, the use of blond plantain makes it very healthy and full of fibers. Blond plantain is also called desert Indianwheat or blond psyllium. It is extremely helpful for treating stomach issues. Apart from being a good way to feed our body, husk helps to detoxify the gastrointestinal tract. And that’s where most of the harmful ingredients we eat every day fall. Over time, if not cleansed, they are absorbed by the cells and accumulate in the body, often causing serious health problems. We take plantain at home every day and we are extremely pleased with the results. Due to its ability to absorb water, it is extremely useful in thickening sauces, puddings and purees. It is used extensively in the keto diet, but you can safely use it daily at home.

If you do not have blueberries on hand, you can always use fruit to your liking. It also becomes wonderful with strawberries. But let’s not talk anymore, let’s get to work!

    Steps

    1
    Done

Mix the blueberries, vanilla, cinnamon, almond milk, stevia and erythritol in a blender. Strain until homogeneous.

    2
    Done

Add husk and chia and mix well. Allow the mixture to sit for 10 minutes and stir again.

    3
    Done

Distribute in glass cups. It is good to leave the pudding to thicken in the refrigerator for one night.

    4
    Done

Serve as you decorate it to your liking. At home we love it with coconut shavings, hemp seeds and strawberries.
