2 tsp Baking powder
2 Vanilla powder
2 tbsp Blue Spirulina
3 tbsp Lemon juice
8 tbsp Maple syrup
Coconut cream
400 ml Coconut cream
5 tbsp Maple syrup
1 tsp Blue Spirulina
6 Strawberries
Blueberries jam
240 ml Blueberries
200 ml Water
4 tbsp Maple syrup
1 tsp cinnamon

    For a person who does not eat dairy or gluten, I decided to prepare something new and bold for my holiday 🍰. I wanted not just a cake, but a healthy and special cake. For months, the idea of making a cake for my birthday with blue spirulina kept coming to my mind. This year for my birthday I am on a blue wave. I use green spirulina every day and we love it at home. I managed to obtain the ingredients and with some experiments in the kitchen, I created my first blue vegan cake. This type of spirulina is a bit hard to find but you can always order online. It tastes quite different from green spirulina and is much more pleasant and easy to use. Blue spirulina is very healthy. It strengthens the immune system, has strong antioxidant properties, is rich in B vitamins, aids digestion, and boosts metabolism. In short – blue healthy magic! The cake is relatively easy to prepare. The idea is to prepare something new and special, which means to get out of your comfort zone and experiment. I like to prepare the layers from the day before, and on the next day, I prepare and assemble the cake. You can use any gluten-free flour, as well as replace maple syrup with honey or agave.

    The hardest part is finding the right canned coconut cream.

    🔵 The packaging must say coconut cream. Otherwise, the product is quite liquid and does not have a consistency like cream.

    🔵 The second very important step that you must follow is to put the coconut cream in the fridge from the night before. It needs to tighten so that you can separate the water the next day.

    Preparation of cake layers

    Grind peeled almonds into flour.

    Grind the oatmeal into flour.

    In a bowl, mix the almond and oatmeal. Add baking powder.

    Add the blue spirulina.

    Heat the almond milk on a hot plate. It should not be hot, just warm.

    Melt the coconut oil in a water bath.

    In a bowl, mix the wet ingredients and stir well.

    Add the wet ingredients to the dry ones and stir until homogeneous.

    Grease a form with removable bottom. I used a diameter of 18 cm.

    Pour the mixture into the form.

    Bake in a preheated oven at 150°C degrees for 30-40 minutes. It depends on how strong your oven is. Check periodically with a toothpick.

    Allow the cake layer to cool for 10 minutes before removing it from the pan. Once removed, allow to cool completely.

    Carefully cut it into two halves.

    Preparation of blueberries jam

    Wash the blueberries. You can safely use frozen ones.

    Put the jam ingredients in a small saucepan over high heat. Once it boils, reduce to medium heat.

    Mash the blueberries while the mixture boils.

    Allow to cool while you prepare the rest of the cake.

    The coconut cream

    Turn the cans of coconut cream upside down and open it. Separate the coconut water and pour the coconut cream into a bowl.

    Add the maple syrup and beat with a mixer until creamy.

    Divide the coconut cream into two parts and add the blue spirulina to one of them.

    Spread the blue cream on top of the cake layer.

    Wash and cut the strawberries into thin strips. Arrange them on the blue cream.

    Carefully place the second layer on top.

    Finally, spread the remaining white coconut cream. Smooth it if you wish.

    You can decorate the cake as you wish. I used blackberries, strawberries, and blueberries. I also poured blueberry jam over it. If it has shrunk, you can dilute it with water so that it can run down the cake.
