4 Medjool dates
3 Bananas
180 ml Peanut butter 3/4 чаша

240 ml Rice flour 1 cup
100 ml Einkorn flour
20 ml Almond flour
1 tsp cinnamon

0.5 tsp Baking soda

    Who would resist delicious banana muffins?! Especially if they are healthy. Well, I can’t. 😇 I know that banana desserts are loved by almost everyone and I decided to prepare such a delicacy. At home, we love the tasty combination of banana and peanut butter. I wanted to make muffins that are vegan but juicy and puffy. You can easily replace peanut butter with tahini or other nut butter. Also, if you do not have the same gluten-free flours, use the ones you have. Experiment and find the perfect gluten-free blend according to your tastes. I regularly try different combinations and that’s how I learn. 🙂 Dates are used to sweeten the mixture. I can assure you that you get enough sweetness and there is no need to add extra sweeteners. Also, the recipe is very easy and quick to prepare. Well, let’s start preparing it!

    Soak the dates in hot water for 20 minutes.

    In a bowl, mash the bananas.

    In a blender, mix the dates, bananas, peanut butter, water and lemon juice. Blend until a liquid homogeneous mixture is obtained. You may need to stop the blender, stir and blend again.

    In a large bowl, mix the dry ingredients and mix well.

    Add the banana liquid mixture to the dry mixture and mix until homogeneous.

    Bake in a preheated oven at 180°C degrees for 20 minutes.

    Once ready, allow to cool in the silicone molds for 10 minutes and then remove to cool.
