2 Bananas
1 cup Oatmeal
120 g Coconut flakes
2 tsp Chia
2 tbsp Hemp seed optional
1 tbsp Maple syrup optional
1 tsp Baking powder
1 tsp Beetroot powder

    There are always bananas at home. 🍌 One of my favourite fruits that I eat every day. I also love to cook with bananas. 🙂 Not only is everything delicious with them, but you may not add sweeteners because bananas are enough for sweetness. On the other hand mashed bananas are ideal for thickening the mixture when it is vegan and there is no eggs. And who said we needed eggs to make a baked dessert?! It is a delicious challenge to cook vegan and it’s great for your health! One of my best decisions is to stop consuming dairy products and eggs.

    Cookies are so easy to prepare that any housewife would have the time and easily prepare them. Or even eat them! You can safely store them in jar or box for a few days. And if you eat them at work, beware of attacks from colleagues. 🙂 You can sprinkle whatever you have on hand or skip this part.

    Mash bananas in a big bowl.

    Add oatmeal, coconut flakes, baking powder, maple syrup, chia seeds and hemp seeds. Stir well.

    With wet hands, form small balls of the mixture by hand and flatten them in the shape of cookies. Place them on paper and leave some space between each cookie.

    Sprinkle them with beetroot powder.

    Bake in a preheated oven at 200°C degrees for 24 minutes.

    The hardest part is waiting them to cool down. Once they are ready, serve and enjoy!
