200 g Chickpea
1 Green pepper
7 Dried Tomatoes
1 tsp Salt
1 tsp Fenugreek
1 tsp Honey garlic
2 tbsp Olive oil
50 g Vegan Cheese

    Everything stuffed is so delicious! And, when you add a variety of vegetables, it becomes unique! One of our favourite foods at home is sweet potatoes. It’s no coincidence that I came up with a new recipe that contains it. I first cooked it to try the flavor and then modified it to a state that would be most delicious. This is how these delicious stuffed sweet potatoes were born.  🍠 I used medium-sized sweet potatoes. They have a unique taste that reminds me personally of roasted pumpkin. Chickpeas with sweet potatoes are not only a perfect combination of flavors, but also very healthy for the body. Personally, I like to add a little chickpeas to my recipes and I think they become very successful and delicious. Do not underestimate the sweet potato, but turn it into a faithful companion in the kitchen. Surprise everyone at home with something new and unique.

    Wash the sweet potatoes well.

    Cut it along its long part into two equal halves.

    Punch each half with a fork to make it easier to bake.

    Add salt and olive oil to the halves and place them in a pan, baking them at 220°C degrees for 40 minutes.

    During this time, peel the chickpeas.

    Cut the peppers and sun-dried tomatoes.

    Roast chickpeas, peppers and sun-dried tomatoes in a pan for 4-5 minutes.

    Once the sweet potatoes are ready, scoop out the inside with a tablespoon and mix it with the other vegetables. Mix the mixture well and season it with spices.

    Fill the sweet potato halves with the vegetable mixture.

    Grate the vegan cheese. Sprinkle the sweet potato with it.

    Bake at 180°C degrees for 5 minutes.
