1 Zucchini
1 Eggplant
2 cups Rice flour
1 tsp Salt
1 tsp Oregano
0.5 cup Water
2 tbsp Grape seed oil

I love to eat fried zucchini and eggplant, but fried food is not healthy at all and does not work well for me. Not intending to give up, I made this simple and delicious recipe, which perfectly replaces the fried version, that it is even lighter and my stomach does not hurt from it. Let’s try it! 🙂

Peel and cut into thin slices the vegetables. The thinner the better.

Moisten them with water and grape seed oil.

Adjust the flour and spices in a separate bowl. Roll each piece in the mixture.

Arrange them in a pre-lined tray with baking paper. You can easily put them close to each other.

Bake at 180°C degrees for about 35 minutes.
