Directions
Eggplant is one of my favourite vegetable that I almost always get fed up with. Easy to prepare and insanely tasty. Ideal for both grilling and baking. Since I avoid frying my food, I give you a recipe for baked eggplant. You should choose your baking tray carefully in order to fit all eggplant pieces if you want to avoid baking two separate batches. This is not enough for main dishes, but is suitable as a side dish to another recipe.

Slice the eggplant, salting the pieces well and letting them sit for at least 20 minutes. |

Let the oven preheat to 180°C degrees. Arrange the eggplant on baking paper in a pan. Grease the slices with avocado oil on both sides and bake for 18 minutes, turning the eggplant halfway. |

Meanwhile, roast the sesame seeds in a pan until cooked through and leave to cool. |

In a large bowl, mix the honey, water, vinegar, avocado oil and miso. |

Spread the resulting miso mixture on the prepared eggplant slices, sprinkle them with sesame seeds and chives. |

Put them to bake for another 4 minutes in the oven. |
