    At home, we always have bananas 🍌 on hand, and we’re always looking for something healthy 🌱 and wholesome for an afternoon snack. That’s how I came up with these incredibly quick banana cookies 🍪! I wanted something easy, light ✨, and nourishing, so I chose dates instead of maple syrup or agave — keeping them naturally sweet without any added sugars. It’s very important to me that they are made with gluten-free flour  and without any added butter, oil, or heavy fats, so they stay gentle on the body 💛. This recipe makes about 10 cookies, enough for two days (if they last that long!) 😋. My husband absolutely loves them and always asks if I’ve made a new batch!

    Preheat the oven to 185°C (365°F) with top and bottom heat (grill) function.

    Mash the bananas with a blender until you get a smooth mixture.

    Add the dates and blend again until smooth. If the dates are dry and hard, soak them in hot water for about 10 minutes.

    Add the vanilla and stir.

    Add the flour and mix.

    Add the oats and stir.

    Form the cookies with a spoon onto parchment paper and sprinkle with cinnamon.

    Bake with top and bottom heat (grill) for 25 minutes.
